keeping basil fresh

in my dictionary summer means fresh basil, and fresh basil means pesto, salads, sandwitches.

Every Sunday morning I go to the Farmer’s Market and get A HUGE bunch (or bunches) of fresh basil and one of the things that I have been trying to deal with is keeping basil fresh!

I have tried it all… wrapped in paper towels, in ziplock bags, in water – but always in the fridge. Who would have thought that the key to keeping basil fresh was to cut the stems and place them in water OUTSIDE the fridge?

Ps- the paintings behind the basil were a wedding gift from my AMAZINGLY talented sister (from another mister) Jarnah who is getting married in a month in the Solomon Islands…. I love you banana nut!
