Garlic

Jason and I looooove garlic, the stronger the better… I don’t mind mincing one or two cloves for a given dish, but recently I started to mince two or three HEADS of garlic at a time to store in my fridge… The first time I used a garlic press, but it was messy and I ended up mincing some of them by hand anyway since the press doesn’t use the entire clove… Today I used a zester, and even though the mince was much nicer than the garlic press, some of it still had to be minced by hand AND I cut my fingers a bunch of times… Anyone know a good way to mince large quantities of garlic efficiently? (I refuse to buy pre-minced garlic from the supermarket.. far inferior to the fresh thing!)
