I don’t want to brag but….
…but I think I might have made the yummiest pumpkin cupcakes in the world… they are rich and they should not be made if you do not have guests… otherwise you will regret it!
1.75 cups flour
1 can pumpkin (15 oz)
0.25 cups tapioca starch
0.75 cups canola oil
2 cups sugar
4 lightly beaten eggs
spices (to taste) ginger, cinnamon, cloves, vanilla, nutmeg
350F for 18 minutes…. YUUUUMMMMM (especially right off the oven when they are hot and melt in your mouth)
Speaking of food… what’s wrong with the juice industry… I could not find a 100% cranberry juice bottle in the entire supermarket! and I am sorry, but 100% cranberry juice =/= juice from a blend of 4 juices from concentrate with added ingredients… give me a break!
